I'm a Christian wife & homeschooling mama, saved by faith through grace. I changed my family's diet from SAD (Standard American Diet) to healthy, delicious & nutritious traditional foods. I've recently discovered there's a name for the way that I eat. It's called Primal or Paleo (I like the diet and think of the men and women who worked hard from sunup to sundown, constantly on the go, eating meat, berries they picked, cheese they made. I do not believe in evolution). No grains, legumes, refined sugars, and no/limited dairy.

Easy Chocolate Cake



My son turned 8 yesterday. Craziness. I made this for his birthday party last Sunday, cupcakes yesterday and even made a friend's baby's first birthday cake (that was scary! What if it hadn't turned out?).
My mom and mother in law brought the food. SO GRATEFUL! Such a blessing. Mom brought pork (smelled delicious) & salad, MIL brought lots of fruit. A nice primal dinner to go with the yummy cake. I'm very blessed to have the mothers I do - by birth and marriage!
Anyway, I winged it the first few times, and actually wrote it down when I made cupcakes yesterday. Enjoy!

Easy Chocolate Cake
1 cup almond butter
1 tap baking soda
1/4-1/3 c raw cacao powder or cocoa
3 Tbsp coconut flour
1/3 c honey
1 can full fat coconut milk
4 eggs

Mix & bake at 350 20-25 minutes, checking often after 20.


For the frosting, I used chilled Chocolate pudding. mmmm...One could also use chilled whipped coconut cream.
