I've recently discovered there's a name for the way that I eat. It's called Primal or Paleo (I like the diet and think of the men and women who worked hard from sunup to sundown, constantly on the go, eating meat, berries they picked, cheese they made. I do not believe in evolution). No grains, legumes, refined sugars, and no/limited dairy.

Chocolate Protein Pancakes

My third child, a 2 1/2 year old girl, has decided she's not really into breakfast. I'm not quite on board with that, so I try to pack as much protein into these pancakes as I can, so she'll get what she needs to start the day right.

Chocolate Protein Pancakes


12 eggs
1 cup hemp protein powder
1 cup coconut flour
1/2 - 1 cup raw cacao powder
1 tsp sea salt
1 tsp baking soda
1/2 cup coconut sugar or honey (add 1/4 cup less water if using honey)
2 cups water or a milk (raw cow's, almond, coconut, etc)
1/2 cup melted coconut oil
1 Tbsp vanilla (optional)
2 tsp apple cider vinegar

I put them into my Omniblend V blender in the order listed, that way, if I get a bad egg, it doesn't ruin the whole thing. You could put all the liquids in first, then dry, make sure the baking soda goes on top of everything, so it doesn't react with the vinegar yet. Put protein powder down first, so the coconut flour doesn't start absorbing the liquids before you're ready.

Blend. Let sit for a couple minutes.
Make pancakes.
