I'm a Christian wife & homeschooling mama, saved by faith through grace. I changed my family's diet from SAD (Standard American Diet) to healthy, delicious & nutritious traditional foods. I've recently discovered there's a name for the way that I eat. It's called Primal or Paleo (I like the diet and think of the men and women who worked hard from sunup to sundown, constantly on the go, eating meat, berries they picked, cheese they made. I do not believe in evolution). No grains, legumes, refined sugars, and no/limited dairy.

Mudslide Cookies

These Mudslide Fudge Cookies from the Food Renegade are DELICIOUS!!!! They've got a dark chocolate flavor that is simply wonderful. I ate my last two with some chocolate coconut milk ice cream, and they tasted much like a brownie. Yum, yum! Be careful to measure the egg whites, and don't just throw 2-3 eggwhites into your bowl, because they turn out very wet. Very. Ask my dear husband <3 :)

Chocolate Pudding!

I got my cacao powder and nibs via UPS yesterday, so wanted to try something with them! I turned to one of my favorite websites, The Spunky Coconut and searched "cacao". This Coconut & Raw Cacao Pudding
recipe came up, so I tried it. I'm out of hemp seeds (something I will be remedying Friday) and used sucanat, bc I'm also out of coconut sugar. Amazon is my friend and that's where I got the cacao, ordered coconut sugar and will be ordering hemp seeds from. This was really easy and fun. I think I'll use almond milk instead of water next time, though. Looking forward to having the hemp seeds in it!

Almond Joy Mounds Candies - done healthy!

I thought I had blogged this a long time ago. I took a picture, but apparently, forgot to put it in a post, lol.
So here ya go. As soon as my coconut oil comes in (backordered, darn!), I plan on making some. I should probably get some almonds. I think I will use almond slivers when I make these again.

If you're corn free, make sure you have a corn free Vanilla, I used Flavorganics from Azure Standard. I skipped the almond extract, because I don't have any, and I didn't miss it. Of course, I wouldn't know what I'm missing, since I haven't meade them with it...
I got the recipe from the The Nourishing Gourmet, and she has so many wonderful recipes, do check the site out and see what you can find!

Chocolate Bean Cake

That's right. The Spunky Coconut has done it again! Actually, she did it last year, but I'm a little slow.

I tried making Kelly's Marble cake, but my blender is dying a slow, painful death (who wants to donate to a Vitamix fund? All the cool gluten free bloggers have one;), and wouldn't really mix the vanilla part well, so there wasn't much and it was lumpy. But, oh boy. The chocolate. WOW!! It tasted like, wait for it.........REAL (gluten filled) CHOCOLATE CAKE!!! So I started just making the chocolate cake. The kids and I are having a blast! We had cake for breakfast, and I don't feel bad. The Chocolate Bean Cake has loads of protein and healthy things in it - beans, coconut oil, eggs, etc.

I looked for a good refined sugar free chocolate frosting and found a really good one at Living Free of...dairy, gluten and sugar. In fact, if you freeze it a bit, it tastes like chocolate frozen yogurt. Oh yeah. Hmmm, I should pop it in my ice cream maker!

Faux Frosty for breakfast? Why, yes, thank you!

A group of friends and I started a blog called Whole Foodigans. It's about whole foods, but not only real foods, DELICIOUS real, whole foods!

Anyway, mid morning snack - Faux Frosty! No sugar. It has Dolomite powder in it, which adds calcium. Delicious. Try it!

SNOW CREAM & Brownie Sundae!!



Yesterday it snowed. A LOT. But all that snow is good for something!


So we made snow cream today! My friend, Holly, posted it when they got snow a few weeks ago. I changed the sweetener from sugar to maple syrup, which was her idea after she made it. It was delicious!!!


Snow Cream
bowl of fluffy white snow (don't get yellow!!) it was probably around 8 cups
1 cup almond milk
1/8 cup maple syrup
1 tsp vanilla

mix all together and enjoy!!

 It's after supper now, and I made the snow cream again. I also made Brownies, so we are having brownie sundaes! Delicious! If you didn't think I ate well before, surely you do now! :)

Black Bean Brownies
1 can black beans, drained and rinsed (or 2/3 can refried black beans with jalepenos from Trader Joe's, bc that's what I had ;)
3 eggs
3 Tbsp Coconut Oil, melted
4 Tbsp Cocoa powder
sprinkle of salt
1 tsp vanilla
1/2 cup honey
I added a couple half dropperfuls of Vanilla Creme Stevia, as well

Puree with blender/food processor/hand blender.

Bake at 350 for about 45 minutes, keeping your eye on it the last fifteen minutes.

Top with snow cream for a delicious sundae!

Now I better eat some green salad before I turn into a snowmama!
