Plum Syrup & tomato free BBQ Sauce

Oh. My. Yum.
This is amazing. I didn't intend on trialing plums, bitin was making this for my sweet kiddos and somehow a little syrup ends up in my mouth. I can't quite remember if it had fallen on t finger or what, but clearly, it wanted to be eaten.
And wow.

I just made a cut in each overripe mini plum, pulled out the pit and pulled off the stem, plopped in a pot and let them simmer covered for a hour or two. I sort of forgot about them. Oops. But a yummy oops!

Them I poured them into my omniblend and added about 1/4 cup coconut sugar. They probably didn't need the coconut sugar. Blended and it was pretty thick, so I added some water and blended again. Possibly 1/2-1 cup of water. I didn't measure. Aren't you impressed with how exact I am in syrup making?

I'm thinking pancakes and eggs for dinner, so my family can find out how AMAZING this syrup is!

Update: It was amazing warm, then tasted more like ketchup cold. So I tried it putting it on the chicken I was baking. AMAZING BBQ sauce!

Chocolate Protein Pancakes

My third child, a 2 1/2 year old girl, has decided she's not really into breakfast. I'm not quite on board with that, so I try to pack as much protein into these pancakes as I can, so she'll get what she needs to start the day right.

Chocolate Protein Pancakes


12 eggs
1 cup hemp protein powder
1 cup coconut flour
1/2 - 1 cup raw cacao powder
1 tsp sea salt
1 tsp baking soda
1/2 cup coconut sugar or honey (add 1/4 cup less water if using honey)
2 cups water or a milk (raw cow's, almond, coconut, etc)
1/2 cup melted coconut oil
1 Tbsp vanilla (optional)
2 tsp apple cider vinegar

I put them into my Omniblend V blender in the order listed, that way, if I get a bad egg, it doesn't ruin the whole thing. You could put all the liquids in first, then dry, make sure the baking soda goes on top of everything, so it doesn't react with the vinegar yet. Put protein powder down first, so the coconut flour doesn't start absorbing the liquids before you're ready.

Blend. Let sit for a couple minutes.
Make pancakes.

Faux Parmesan Chicken & Coleslaw

I had pork chops, but no Parmesan, so I made this instead for my family, who occasionally have cheese.

Faux Pork Chops
Pork chops
Coconut flour
Eggs
Basil, thyme & rosemary
Shredded mozzarella
Marinara

Beat egg in bowl.
Mix coconut flour with spices in pie plate.
Dip chops in whipped egg, then coconut flour & spices.
Fry in oiled skillet, I used my cast iron pan with leftover chicken grease. Flip to do the other side.
Put marinara in oven safe dish.
Put whole kit & caboodle in preheated to 350 oven for 25-30 minutes. add cheese last 5-10.

Serve with sauce & slaw. (I got a coleslaw mix from store and made the dressing. I didn't have yogurt, do I used some mayo & oil instead).

Easy Chocolate Cake



My son turned 8 yesterday. Craziness. I made this for his birthday party last Sunday, cupcakes yesterday and even made a friend's baby's first birthday cake (that was scary! What if it hadn't turned out?).
My mom and mother in law brought the food. SO GRATEFUL! Such a blessing. Mom brought pork (smelled delicious) & salad, MIL brought lots of fruit. A nice primal dinner to go with the yummy cake. I'm very blessed to have the mothers I do - by birth and marriage!
Anyway, I winged it the first few times, and actually wrote it down when I made cupcakes yesterday. Enjoy!

Easy Chocolate Cake
1 cup almond butter
1 tap baking soda
1/4-1/3 c raw cacao powder or cocoa
3 Tbsp coconut flour
1/3 c honey
1 can full fat coconut milk
4 eggs

Mix & bake at 350 20-25 minutes, checking often after 20.


For the frosting, I used chilled Chocolate pudding. mmmm...One could also use chilled whipped coconut cream.

Meatza Meatza

I still can't eat most foods, but was able to add grapes - YAY!!

Wellness Mama has some awesome, primal meal plans, and I've been mostly following them. She puts all the recipes, shopping list and plan together and all I have to do is buy the stuff and follow the recipe. So far, her recipes are quite easy. I'm getting most ingredients at Costco right now, because I have a lot going on and that's the easiest. Conventional Banana.

I made this pizza for the family tonight, and it was a pretty big hit. Some small people weren't huge fans of the mushrooms, but what're you gonna do?

Well, I've been absent awhile because there's not a whole lot of recipes to share when you can only eat 7 things. Yup, I can eat 7 things. That's all my sweet, adorable baby can currently tolerate.
Chicken
Bananas
Eggs
Raw, local honey
Raw cacao powder
Avocados
Grape Juice (Welch's 100% Concord - not technically a food, but I'll take what I can get)
salt & pepper

I used to eat cooked carrots, and then found out, through keeping a food diary, that she's intolerant to those. So now we're actually getting sleep at night! I'm a new person! I can face the world! I'm not a puddle of tears when my husband gets home! It's great!

Now that I have honey and raw cacao powder, I am a HAPPY camper! And I keep finding new ways to make the things I can eat, so that's a definite plus.

When people hear I can only eat these seven things, they usually react with sympathy and pity. As long as I keep a positive attitude (which is definitely not 100% of the time), I'm pretty happy. When I start to focus on what I CAN'T have, then my attitude sours, because I'm focusing on myself and what I can't do, rather than the healthy, delicious foods I CAN have, and being thankful for them. I am truly thankful for each food I can eat. It's unusual that such an intolerant/allergic baby can tolerate eggs, and for that, I am truly thankful.

So when you're with me when I'm eating, don't pity me! I'm enjoying your company and know that this is a very short period in my life. And it is worth it to give my sweet baby the best food I can, so that she will continue to grow and develop.

AND, I'm only 5-6 lbs away from prepregnancy weight! WOOHOO!!!!! Definite pluses to my restrictions ;)

(note on the juice: I wouldn't normally be drinking juice, but since starting SCD  - Specific Carbohydrate Diet -  it is on there and I'm not going to take away a monosaccaride that is easily digested and doesn't give me candida problems or sugar cravings. It is a treat that she and I can both handle, and I drink it as such.)
