I made it for the first time last night, and had NO words.
None.
Quite unusual for me, if you know me ;)
My friend, Melanie, shared this recipe and gave me permission to blog it and share it with all of you! I hope you enjoy and post your results!
Best Creamy Tomato Soup EVER
(my notes are in parentheses)
1 small onion, diced
2 Tbsp minced garlic (I used my garlic press)
Saute in olive oil (or coconut oil) until onion are soft and add:
1 28 oz can of fire roasted tomatoes (used Muir Glen)
1 tsp oregano (out of oregano apparently, so used Organic Italian Seasoning)
1 Tbsp balsamic vinegar
Sea salt
Fresh ground black pepper
Stir over medium heat to let the flavors combine for a few minutes then add:
1 can of coconut milk(365 Coconut Milk NOT lite)
or, if you can do dairy,
1 1/2 cups of heavy whipping cream
Stir to combine the milk then move to a blender and puree for a smooth soup or eat as is. (I used my immersion blender, which left a couple chunks, but was PERFECT).
I ate it with Falafel I got from Costco and OH MY WORD. All I talked/texted/facebooked about for the next three hours was this soup. So incredibly delicious. To make it extra delicious, workout hard beforehand. ;) This is the perfect soup to serve with Grilled Cheese Sandwiches (if you can have such things).
My thanks and indebtedness to Melanie for sharing this amazing recipe.

Mmmm, sounds good. Wonder how wonderful it would be with tomatoes from the garden(in season)baked/broiled in the oven?
ReplyDeleteDelicious, I'm sure!!
ReplyDeleteI made it and added some ground sausage, homemade croutons, and cheese (for the dairy enabled) to the center as a garnish. Yummy!
ReplyDeleteThe boys and I just had this for dinner and it was delicious! If you can do dairy it really is fantastic with grilled cheese, once the sandwiches were eaten we added croutons to the remaining soup and it was equally yummy :)
ReplyDeleteOnce DH gets home he'll be having his with one of these sandwiches: http://www.fortheloveofmayo.com/2011/02/08/grilled-garlic-tomato-and-mozzarella-sandwich/
I'm really looking forward to sneaking a few bites ;)
Maybe this is what I need to enjoy my falafel. I was not impressed w/ the Costco ones.
ReplyDeleteThis sounds wonderful and I don't have to guess if it will be okay with coconut milk. Thanks, Mary.
