I'm a Christian wife & homeschooling mama, saved by faith through grace. I changed my family's diet from SAD (Standard American Diet) to healthy, delicious & nutritious traditional foods. I've recently discovered there's a name for the way that I eat. It's called Primal or Paleo (I like the diet and think of the men and women who worked hard from sunup to sundown, constantly on the go, eating meat, berries they picked, cheese they made. I do not believe in evolution). No grains, legumes, refined sugars, and no/limited dairy.
Beat egg in bowl.
Mix coconut flour with spices in pie plate.
Dip chops in whipped egg, then coconut flour & spices.
Fry in oiled skillet, I used my cast iron pan with leftover chicken grease. Flip to do the other side.
Put marinara in oven safe dish.
Put whole kit & caboodle in preheated to 350 oven for 25-30 minutes. add cheese last 5-10.
Serve with sauce & slaw. (I got a coleslaw mix from store and made the dressing. I didn't have yogurt, do I used some mayo & oil instead).
My son turned 8 yesterday. Craziness. I made this for his birthday party last Sunday, cupcakes yesterday and even made a friend's baby's first birthday cake (that was scary! What if it hadn't turned out?). My mom and mother in law brought the food. SO GRATEFUL! Such a blessing. Mom brought pork (smelled delicious) & salad, MIL brought lots of fruit. A nice primal dinner to go with the yummy cake. I'm very blessed to have the mothers I do - by birth and marriage! Anyway, I winged it the first few times, and actually wrote it down when I made cupcakes yesterday. Enjoy! Easy Chocolate Cake 1 cup almond butter 1 tap baking soda 1/4-1/3 c raw cacao powder or cocoa 3 Tbsp coconut flour 1/3 c honey 1 can full fat coconut milk 4 eggs
I still can't eat most foods, but was able to add grapes - YAY!!
Wellness Mama has some awesome, primal meal plans, and I've been mostly following them. She puts all the recipes, shopping list and plan together and all I have to do is buy the stuff and follow the recipe. So far, her recipes are quite easy. I'm getting most ingredients at Costco right now, because I have a lot going on and that's the easiest. Conventional Banana.
I made this pizza for the family tonight, and it was a pretty big hit. Some small people weren't huge fans of the mushrooms, but what're you gonna do?
